long time, no blog...

So a months' hiatus - oops! Unintentional, I swear! When did we go from January to February? Lots of new and exciting developments chez KittyCate - can't wait to share those all with you in the coming weeks!

I've been busy with life and everything that comes with it - particularly having V around, working metro, has been wonderful and has meant I've not been spending much time a deux with my poor neglected laptop



Latest Nespresso discovery - iced coffees in summer. Livanto shot + ice + skim milk. More than a little obsessed!


Other current obsession is plain tortilla chips with homemade salsa om nom nom


Whipped up my first pavlova this Australia day - so easy with this gorgeous baby, I almost felt like I was cheating...

From next month, I'm going to be working from our Sydney office twice per month, something a wee bit different! Working in a small regional office it can get fairly isolating at times, so it will be nice to have a bit more regular contact with the rest of the office, particularly my "team" I work on. I won't lie, I'm not looking forward to the commute again, the early starts and late finishes, especially when we get into winter! But it is only infrequent, and work has been great in terms of flexibility with the days etc, so I'm seeing it as a positive. Plus it will be a great opportunity to catch up with so many of my lovely Sydney-residing girlfriends!

Was in Sydney last week for a day's hearing, and it was nice to reacquaint myself with all these lovely little places and things we just don't have down in the 'Gong...


Like high-quality macarons...


And bubble tea! (btw, totally converted, Chatime is the BOMB! Never going back to Easyway!) I predict becoming a frequent flyer haha

Are you all still gorging on summer fruit? The nectarines have been blowing my mind lately!


V heads off again next Monday, to Bourke! As in, the back of! Which I find endlessly hilarious. (Technically, its Wannaring and then Enngonia, but its so much funnier to tell people my husband is heading out to the back 'o' Bourke heh). The timing of this trip has the distinction of encompassing both his birthday, next Tuesday, and Valentine's Day on Thursday *sadface* 

Speaking of Valentine's, I want to bake him some of his favourite red velvet cupcakes this weekend, and I've never made them before - so hit me with your best recipes peeps!

Mucho apologies for the extended hiatus, it won't happen again, promise!

    However, I can't get them to be red enough... if you add less cocoa they are not as tasty, but the right amount and they look more brown than red. hmmm

    That's exciting you'll be working in the Sydney office.

    How awesome are the Iced Nespresso's SO good!
    Do you have the chill function on your brother?
    I always make massive cappuccino cool froth it's SO good

    Here is the Magnolia Bakery recipe for red velvets, it's the only one I use. The cakes turn out not too dense and super bright, BRIGHT red
    I've found other recipes where the red is too... brown.. or dark on account of the cacao.

    They are a process to make and careful you don't splash red everywhere!

    Omg I'm totally going to make a red velvet heart cake for Hamish hahaahahahahaha and get him a super kitsch card from a $2 shoppe

  6. Yay, you're back! That pav looks delish, especially with the summer fruits. I had red velvet cake for my birthday last week and it was amazing. I have never made them before but the recipe from mez looks good.
